The chef Dabiz Muñoz, who runs the restaurant DiverXO in Madrid, has a personal connection to Huerta del Marquesado, a municipality in the Serranía Alta de Cuenca with fewer than 150 inhabitants. Muñoz's interest in the area is not solely familial. In this village is the restaurant Fuentelgato, run by the young Álex Paz and Olga García, which has managed to enter the Michelin Guide and obtain a Sol Repsol. Their proposal is based on local produce and attracts visitors from various parts of Spain.
The chef, who manages three Michelin stars and maintains prices of up to 450 euros on his menu in Madrid, also frequents another establishment in the province: the restaurant Paloma II, run by the Artero Polo brothers, natives of Tinajas. There he usually orders lobster rice.
